How to replace gluten from baking bread

Method:

You can replace gluten in bread by replacing the flour. This is not an easy thing to do, unless you can find gluten-free flour. Nevertheless, there is a way to do it.


Replace 1 kg of flour by 700g of brown rice flour and 300g of tapioca starch. 

To thicken the dough you can add 4 teaspoons of xantham gum, which can be found in specialty stores all over the world.
