Galley Outfit Standard

 

Within a project where we aim to uniformize and standardize galley operations within one company, it is imperative that all essential equipment is available to the chief cooks on all vessels.

 

Therefor we have created a Galley Outfit Standard List.

 

This document serves a double purpose:

It defines the ideal first outfit for newbuilds in order to set the new standard.

It is a reference chart for existing vessels to use during a mandatory galley equipment inventory, this in order to obtain the items missing.

The document consists of a checklist, called Galley Outfit Standard List classified according to crew size, and a Purchase guide on what to look for in certain items. Both documents to be found below.

 

Within this project we focus on purchasing quality items that are durable and sustainable, as, in the long run, this is more cost-efficient and environmentally justified. Quality tools aren’t necessarily expensive but do have a major impact on workload efficiency and will reduce both physical and mental stress for the galley team.

 

The below Purchase Guide gives indications on what to look for in certain items and often suggest the best buy option from our own experience.

 

How to correctly use the Galley Outfit Standard list

 

 o Newbuilds

 

For newbuilds we recommend you apply the below Purchase Guide accurately as it will guarantee a solid and sustainable first outfit that is ready for Phase One and Phase Two of the MSCC. As the ship’s caterer will provide you with these items from its home base, all items can be exactly provided as prescribed.

 

o Active vessels

 

For active vessels we recommend you use the Galley Outfit Standard as a reference list to do a detailed inventory of your equipment. On board your vessel, most of the items from the Galley Outfit Standard or similar items may already be within your inventory. We advise you to acquire the missing items and/or replace perished or worn using the Purchase guide to purchase the correct items or, in case they are not available in your region, purchase items that come as close as possible to the described specifications. In case you have issues finding the correct items, contact the ship’s caterer to work out a solution.
