Qualification


MLC 2006 requires seafarers employed as ships' cooks with responsibility for food preparation to be trained, qualified and certified for the position on board of their ship. They should be found competent in accordance with requirements set out in the laws and regulations of the Flag State. These requirements shall include training covering practical cookery, food and personal hygiene, food storage, stock control, and environmental protection and catering health and safety.


Evaluation


On board, the Master should evaluate the cook on a regular basis with respect to galley performance, cooking skills, menu planning, stock management, hygiene and food safety, etc.
