How to keep delicate sauces warm

Method:

Some sauces, such as Hollandaise, Béarnaise and Beurre Blanc, are difficult to keep warm over a longer period of time. They tend to separate or become omelets when kept on the range and tend to cool down when kept off the range.


How to avoid this:


1. Take a thermos, like the one you use to keep your coffee or tea warm in, and fill it with boiling hot water.

2. Make the sauce you need to keep warm.

3. As soon as the sauce is made, take the thermos, remove the boiling water (make sure it is out until the last drop) and then simply pour your sauce in the thermos.

4. Close the thermos while not using the sauce.

5. You can use this trick for keeping any smooth sauce warm.
