How to keep fresh guacamole green

Method:

Guacamole will turn brown within an hour after making it. How can you avoid this?


1. Make your guacamole with plenty of lemon juice. Compensate the lemon juice with plenty of salt.

2. Put the avocado in a tube (e.g. a measuring cup) and stomp the cup on a table top to remove as much air as possible from the mass. Make sure you have at least 4 cm of the top edge of the tube left.

3. Take some baking paper and cut in in a round shape of the diameter from the tube. This is easily done by folding over the paper 8 times into a triangle and then cutting off the the long side to measure. 

4. Put this circle of baking paper straight on the guacamole. If you don’t have baking paper, simply take some cling foil and cover it straight on the mass. Make sure there are no air bubbles under the paper or plastic. Simply push it on as tight as possible with your fingers

5. Now, take some baking oil and simply put a layer of half a centimeter of oil on top of the paper or plastic. The oil will avoid oxygen to enter the mass. Oxygen will actually cause the colorization of the guacamole.

6. Now put the guacamole in the refrigerator.
