Meat  and poultry starter

Recipe:

Quiche Diavola

Ingredients:

Short crust pastry

Eggs

Chorizo

Spinach

Shallots

Garlic

Milk

Grated cheese

Nutmeg

Pepper and salt to taste

Method:

1. Pre-heat your oven to 180°C

2. Put your pastry sheet lightly in your cake pan and then push it all the way down into the corners.

3. Lay in a sheet of baking paper and add baking beans to the pan. Now bake the pastry for about 20 minutes.

4. Cut the chorizo in dice and bake it in some oil and butter. Dice the shallots and add them to the chorizo.

5. Mince the garlic and add to your pan.

6. Squeeze all the moist out of the spinach and allow to braise with the chorizo mix.

7. Allow this mix to drain and cool down.

8. Remove the cake pan from the oven and distribute the chorizo and spinach mix evenly over the pan

9. Mix the eggs with the milk, grated cheese, pepper salt and some nutmeg

10. Poor this mix over the spinach filling and bake for 40 more minutes.

11. Cut in 8 and serve
