Recipe:

Brussels sprouts with bacon and Béchamel

Ingredients:

Brussels sprouts
Bacon, julienne
Whole milk
Butter
Flour
Nutmeg
Pepper
Salt
Lemon juice

1,5 kg
200 g
1 Liter
80 g
80 g
½ tsp
1 tsp
3 tsp
½ tbsp

Method:

1. Boil the Brussels sprouts, chill and cut in half.
2. Melt butter on low heat, add the flour and stir until mass is coherent and slightly dry.
3. Add the milk and heat on medium heat while continuously stirring until the right thickness. In case the sauce is too thick, add some milk, in case the sauce is too thin, keep stirring and allow to simmer until the right thickness is achieved.
4. Add seasoning and lemon juice and taste. Add salt and pepper to taste
5. Filter sauce through a fine sift
6. Bake bacon strips, add the brussels sprouts and bake together
7. Add the warm béchamel sauce
