Side-dishes - Potatoes

Pumpkin mash

Ingredients:

Potatoes
Pumpkin
Onions
Garlic
Thyme
Bay leaves
Sour cream
Butter
Nutmeg
Pepper salt to taste

Method:

1. Peel the potatoes, cut them in half lengthwise and boil them in salted water until done.
2. Clean and dice the pumpkin.
3. Bake the pumpkin in some butter and oil on medium heat. Dice the onion, grate the garlic and add both to the pumpkin dices.
4. Add thyme and bay leaves and allow to bake further until the pumpkin is done.
5. Drain the water from the potatoes and put them back on the range, low heat, to evaporate excess water. Shaking the casserole helps considerably.
6. Add the pumpkin mix to the potatoes, add the sour cream, pepper, salt, nutmeg and butter and mash everything together.
