Sicilian Pasta Salad

Ingredients:

Dried penne, orecchiette or shell pasta

White balsamic vinegar

Mixed cherry tomatoes

Head radicchio

Mixed pitted olives

Crumbled ricotta cheese

Extra virgin oil

Salt

Freshly grounded pepper

Method:

1. Bring a large pot of salted water to a boil. Add penne and cook according to package directions until al dente, about 10 minutes.

2. While pasta is cooking, whisk 1/3 cup extra virgin olive oil and vinegar in a large serving bowl. Add remaining ingredients and toss until coated.

3. Drain pasta and add to serving bowl. Season with 1/2 teaspoon salt and freshly ground black pepper to taste. Toss to combine.
