Recipe:

Onion cream sauce

Ingredients:

Onions, 

(in half and finely sliced)

Brown sugar

Demi-glace

Thyme

cream

Brown roux (optional)

½ tsp

200 ml



Method:

1. Allow the onions to brown lightly in butter and brown sugar on medium heat.

2. Add the demi-glace 

3. Reduce to 3/4 mass

4. Add thyme and cream and allow to simmer for five more minutes

5. Add some brown roux to thicken the sauce if necessary (for right consistency: sauce should stick to the back of your spoon and fully cover it)
