Meatloaf special

Ingredients:

(Red) onions

Tarragon vinegar

Mixed minced meat

(pork and beef)

Egg yolks

breadcrumbs

Parsley

Cheese, sliced

Ham

Mustard

Butter

Olive oil

Pepper and salt to taste

Method:

1. Dice the onion finely and put in a mixing bowl

2. Now add the minced meat to the diced onion, together with egg yolks, breadcrumb and parsley. Add the mustard and season with pepper and salt.

3. Now, on your cutting board, flatten the minced meat and make it a nice square.

4. In the center dress your cheese and ham slices as if you would be making a cordon blue.

5. Now fold over the meat from both sides, as if you were making a swiss roll. Make sure your rolls are firm. Better to have 4 small meat loafs rather than one big one.

6. Now, color your meatloaf in a pan first, crusting both sides for about 3 minutes on each side, medium high heat.

7. Now put the meatloaf for about 15 minutes in the oven at 170°C
