French Belgian - Fish and seafood

Recipe:

Salmon roll with potato mash and brocolli

Ingredients:

Potatoes

Shallots or small onions

Parsley

Salmon filet

Egg whites

Broccoli

Mustard

Lemon

Breadcrumb

Butter

Sour cream

Method:

1. Peel the potatoes and set aside in a cooking pot with salted water

2. Dice the shallots finely and cut the parsley equally fine

3. Cut six big thin slices from the salmon (about 15cm by 20cm)

4. Cut the rest of the salmon in big pieces and put in the blender

5. Add egg whites to the salmon and blend together

6. Add the mustard, lemon juice, breadcrumbs and pepper and salt and blend one more time. Take from the blender and add shallots and half the parsley.

7. Boil the potatoes and broccoli until done

8. Roll the salmon stuffing in 6 sausage shapes (15cm wide) and roll the sausage shapes in the salmon slices.

9. Bake the salmon on both sides and put in the oven for about 10 to 12 minutes at 180°C.

10. Mash the potatoes, adding the sour cream, some butter and the leftover parsley

11. Butter the broccoli with some onion

12. Serve
