Recipe:

Salmon burger with cucumber and pepper sauce

Ingredients:

Iceberg

Cucumber

Sugar

Vinegar

Water

Shallots

Tarragon

Salmon filet

Eggs

Mustard

Breadcrumbs

Mayonnaise

Green peppercorns

Pink peppercorns

Hamburger buns

Salt and pepper to taste

Method:

1. Slice the cucumbers finely and marinate them in vinegar, sugar and some water.

2. Dice the shallots and add to them the tarragon. 

3. Chop up the salmon finely and mix with shallots and tarragon. Add breadcrumbs, mustard and eggs and mix well. Season with pepper and salt

4. Now form 8 hamburgers from this mix. Use wet hands to facilitate the forming. 

5. Rinse the green peppercorns and briefly blanch them in boiling water.

6. Sift and add them to the mayonnaise, together with the pink peppercorns.

7. Mix well, and season with pepper and salt to taste.

8. Color the salmon burgers on both sides. Meanwhile pre-heat your oven to 180°C.

9. Now, place the salmon burgers on a tray and put them in the oven for about 7 minutes.

10. Separately toast the open hamburger buns in the oven. 

11. Serve: one spoon of pepper sauce, some slices of cucumber and add the burger
