Spinach & Cheese Gujiya

Ingredients:

For the dough:


All-purpose flour

Salt

Sunflower oil

Warm water


For the filling:


Spinach, blanched and chopped

Garlic, finely chopped

Salt

Green chili paste

Mozzarella cheese, grated

Sunflower oil for deep frying

Method:

1. To begin the preparation of Spinach & Cheese Gujiya, in a large mixing bowl, add flour with salt, ghee/oil and dry mix well.

2. Now gradually start adding water and knead to make a soft and supple dough. Cover the dough with a muslin cloth and keep aside till you prepare the filling.

3. Blanch the spinach leaves and drain water completely. Collect the spinach and chop it finely. Now add salt, green chili paste, finely chopped/minced garlic and mix well with a spoon.

4. Add a lot of grated cheese into the spinach mix and keep aside.

5. Now to make gujiyas, first heat oil in wok. Meanwhile clear the counter and dust it well with some plain flour. Pinch a small lemon size dough and roll it to make a small ball.

6. Flatten the dough ball on the counter and roll out to make a round puri. Take spoonful of filling and place it in the center of the puri.

7. Fold one side of the puri and bring it to the other corner such that it makes a crescent. Seal the sides with well and make impressions with a fork. You can also use ready made gujiya making molds.

8. In a deep fry pan, add some oil and heat it up. Once the oil is hot, slide in the gujiyas 1-2 at a time and fry from both sides till golden in color. 

9. Transfer them on a kitchen towel to absorb excess oil.
