Flour

Dry yeast

Lukewarm water

Method:

• Knead all ingredients to a solid mass in the machine. Again, apply same knowledge: yeast and water separately, flour and salt first in the mixing bowl. Part the dough in two equal halfs.

• Take two bowls (slightly greased) and let the dough set for an hour inside the bowls (double the mass, cover with wet towel during procedure)

• Put the dough on the table, push out the air, pre-form and put in the slightly greasy baking form

• Cover and set to rest for another half hour

• Take the cover off, and let the bread rise for yet another hour

• Pre-heat the oven to 230C and add baking tray on the bottom

• Put the bread in the oven, meanwhile adding ice cubes in the tray

• Bake  for 20 minutes, remove ice-tray

• Lower temperature to 200C and bake for another 20 minutes

• Remove from oven and set to rest
